RABLE OF YOUNG RABBIT ROTI AND STUFFED WITH THE KIDNEYS
REDUCTION OF CHAMPLITTE ROSE TO THE THYME BRUSHWOOD
                                        (for 4 people)

Ingredients:
 4 fires-rake of fresh young rabbit, 200 G of square of
boned pig, 30 G of shallots, salt, pepper, 100 G
kidneys of calf, 200 G of onions
thin slices, 30 G of duck grease, 1 dl
of groundnut oil, 50 G from butter, 1 limp of
champlitte rosy.

Preparation:
To bone the rabbit fires-rake (with each fires-rake we obtain 2 half fires-rake).
To cut in small pieces the square of pig.
The calf kidney and small rabbit kidneys.
To mix well and add to this joke chopped shallot.
To salt and pepper. To dissolve 200 G of onions thin slices in the duck grease and to let cook 30 mn.
To extend the rabbit fires-rake thus boned and to distribute the joke above.
To roll and tie up.
In a saltire to make heat oil and butter.
Then to lay out the fires-rake of young rabbit for good to make them colour.
To add the mirepoix and to let approximately cook with furnace 10 mn, thermostat 6.
Mirepoix (2carottes and 2 onions cut of pieces + a thyme brushwood.
Once cooked, to withdraw the fires-rake as well as the strings.
To reserve for the heat.
To thaw the saltire with rosy Champlitte and to let well reduce.
To pass sauce and to rectify the seasoning.
To lay out in each plate compote of onions, to cut in small sections the fires-rake of young rabbit.
To lay out in round on the plate and to pour in the medium sauce.
